PAS 106 - Plated Desserts

3 Cr.
Contact Hours Per Week: 1 Lec., 6 Lab

This is an advanced course in pastry production in which the student will prepare restaurant-style desserts using skills and techniques from previous coursework. The student will build upon the basics with the addition of advanced fillings, flavor profiles and display appeal. The primary focus of this course will concentrate on developing individual desserts with the heaviest focus on plating and garnishing in classical and contemporary styles, with the goal of retail sales.
