NTR 220 - Food Chemistry

3 Cr.

Food Chemistry is the study of the nature of foods, the causes of deterioration, the principles underlying food processing and the improvement of foods for the consuming public with a focus on nutritive value and health impact. Food Chemistry is designed to give students an understanding of the chemical aspects of food composition, giving emphasis to the functional properties and chemical reactions of the major components of foods: carbohydrates, lipids, proteins, and water. The course also provides an integrated picture of food safety, food preservation, and food production.
Pre-Requisites: CHE 120, CUL 121
