PAS 100 - Baking Theory and Principles

3 Cr.


Two 75-minute lecture classes will introduce students to basic equipment and product terminology and their uses. Discussions of the science of leavening agents, chemical reactions and ingredient combinations will be the focus. (Usually offered Fall and Spring semesters.)
